My Go-To Meal

Like almost everyone I know, I’m busy.  There is never enough time in the day. We live far away from everything so just going grocery shopping in the morning can mean returning home well after a normal lunch hour.  On the days I work I get home around 9pm. That’s no where near a normal supper time but I can’t live on snacks and I refuse to go to bed hungry.

These are the times I am ready to attack the fridge and eat whatever I can get my hands on. But guys, what I put in my body plays a HUGE role in how I feel and how my body functions.  The last thing I want to do is come home that hungry and I eat something that will make me feel less than my best.  Like I said, I’m busy, you are too.  We need to feel and function well!

This is where my GO-TO meal comes in!

I posted ^^ picture on instagram yesterday and was asked for the recipe. While it’s not much of a recipe, more of a guideline, it’s both amazingly tasty and easy! You can add your own twist and make this wholesome dish to your own liking.

What you need (for one person):

  • Small skillet
  • Butter (real butter-not that “I can’t believe it’s not” stuff, we know it’s not butter can you tell me what it is?!)
  • Eggs (2)
  • Fresh Spinach (two large handfuls. I prefer the kind that comes in a large box- seems to last longer. Ex: earth’s best brand)
  • Onion chopped (as much or as little as you want- personally I use a handful of chopped red onion)
  • Cheese (a small handful shredded)
  • Avocado (I use about 1/4 large avocado chopped)
  • Whatever clean seasoning you like (I use pink Himalayan salt, garlic powder and cayenne pepper)

  1. Place a slab (about 1/2 Tbs.)  of butter in the skillet (over medium heat) with onion and spinach. Stir around just until spinach starts to become wilted.
  2. Add two eggs to the pan, use spatula to scramble stir and turn.
  3. When they are just about done cooking add cheese and stir once or twice just to start it melting.
  4. Dump it out on a plate, add the chopped avocado to top.
  5. Season. Enjoy!

You may add mushrooms peppers or cilantro either as a topping or add and cook with the onions and spinach.  This is such a versatile dish and jam packed full of goodness! Tons of protein and good fats to stick with you, plus awesome nutritious veggies!  It looks so appetizing too! Bonus: it literally takes 5 min to prep and cook.

Indy 500 and Eggs.

It’s timely that I happened to be posting this now, growing up in Indiana we attended the Indy 500. Which takes place one week from today. The 500 is so incredibly exciting, the loud, fast cars were (and still are) thrilling to me.  One of the best parts of going to the race was leaving super early and enjoying the kid friendly version of tailgating: breakfast. My uncle would cook this awesome scramble of eggs and veggies. My version isn’t made with all the same ingredients he used but I’m guessing it’s the subconscious inspiration behind this meal I love.
